Fabienne RAVOIRE, François RENEL A NOTE ON SUGAR-REFINING CERAMICS DISCOVERED IN PARIS (2nd ARRONDISSEMENT) AND ROISSY-EN-FRANCE (VAL-D’OISE) (LATE 18th-EARLY 19th CENTURIES)

Abstract

Excavations in Paris (a rubbish deposit on a site in the rue Réamur) and Roissy-en-France (an ice-house on the castle site) produced fragments of ceramic sugar-loaf moulds and molasses jars associated with sugar refining. These finds are of particular interest, being the first of their kind in the region. On the Paris site, only sugar-loaf moulds were found and their presence in a rubbish pit can be explained by occupation of the site by the Aubert and Badin distillery from the mid 18th century until 1928. At Roissy-en-France, molasses jars and sugar moulds were discovered close to a sugar refinery set up in the castle’s orangery in the early 19th century. In both cases, significant numbers of stoneware vessels (bottles and terrines) were used.
